Within the past few months, I’ve discovered that I love avocados – I just hate guacamole. In an effort to find a wider variety of vegetable side dishes to go with dinner meals, I came across this avocado salad recipe on Torview. I made a few changes to the recipe so it would be enough to serve 4 people, and I kept the salt and pepper measurements the same. I try not to add too much salt to the food I prepare, and it turned out nice. The lemon juice adds great flavor and mimics a slightly salty taste. I loved this side dish, and it will definitely be a keeper in my house.
- 2 avocados, chopped
- 1 large red pepper, chopped
- 6 tbsp (1/4 cup + ⅛ cup) chopped tomato
- ¼ cup chopped onion
- 1 tbsp lemon juice
- ¼ tsp salt
- ¼ tsp pepper
- Combine all ingredients and serve.
