Soft, cake-like cookies that melt in your mouth!

  • ½ cup butter (1 stick), softened
  • 8 oz cream cheese, softened
  • 1 egg
  • ½ tsp vanilla extract
  • 1 yellow cake mix
  • 1 cup powdered sugar
  1. Using a mixer, cream butter and cream cheese until blended and smooth. I mixed for one minute on the 2nd speed of my Kitchen Aid, scraped the sides down, and then mixed 1 minute on the 3rd speed setting and scraped the sides down again.
  2. Add the egg and vanilla extract, and mix until blended. I had to stop the mixer and scrape the sides down and the beater once during this.
  3. Once the mixture is smooth, add the cake mix, and blend until smooth.
  4. Chill dough for 30-45 minutes to make the dough easier to work with.
  5. Scoop a spoonful of cookie dough, roll into a ball, and then roll the ball in the powdered sugar.
  6. Bake at 350° for about 10 minutes until the bottoms are slightly golden brown.
