Green Spinach Smoothie

When I first got the ingredients out to make this smoothie, Alex cringed.  He’s drank a green smoothie before, from a bottle we purchase at Publix.  But seeing me put all of the spinach in the blender wasn’t too appealing.  Once he tried it though, he couldn’t drink the other green smoothies anymore.  He prefers this one now.  It’s good, and is makes a great meal replacement for lunch!  I had one for lunch today, and it’s held me over from 1pm to 3:30pm (when I usually eat my afternoon snack/meal).

I found the original recipe on Iowa Girl Eats and tweaked it to my liking.  Don’t knock it until you try it.  It doesn’t taste like spinach at all, so it’s a great way to get in a serving of greens!  I’ll share my recipe below.

Serves: 2
Ingredients
  • 1½ medium frozen, sliced bananas (177g)
  • 1½ tbsp peanut butter (24g)
  • 5.3 oz container of strawberry Greek yogurt
  • 1½ cups of unsweetened vanilla almond milk (12oz)
  • 4 cups (85 grams) of baby spinach
  • 1 tsp vanilla extract
Instructions
  1. Place all items in a blender and blend until smooth.
